An awesome eggplant dinner

I’m telling you that I had no idea about everything that’s involved in making eggplant parm.  Holy gracious!  After Amy soaked the eggplant in salted water and let them dry she dipped them in a milk/egg combo, coated them in bread crumbs, and then crisped them up in canola oil.

She put them in a glass dish and covered them with sauce, mozzy cheese, cottage cheese and parm and then did a second layer.  Cover with aluminum foil and bake at 375F for about 30 mins.

While we waited for the food to cook Keith and Amy made some fried ravioli – yum!

After dinner we sat around and chatted for a little while before tackling the dishes and playing some Wii.

Keith wasn’t feeling so great so he went to sleep while Carl, Amy and I talked for a while before indulging in yummy brownies with a bit of ice cream.  Yum!  Carl was a sweetie and got my bowl and even took the picture for me and snapped this lovely picture of me (ha!).

    Way to go on your small dinner and dessert portions! We had brownie and ice cream for dessert on Christmas eve and I think my portion was about 3 x’s that size 😦
