Oatmeal for dinner

Why yes!  Even though I posted our meal plan just a few hours earlier, when Carl got home neither of us were feeling the veggies with peanut sauce and rice so we made it an OYO (On Your Own) kind of evening.  After reading about Katy’s bananas foster oatmeal breakfast this morning I knew exactly what I wanted and it was super easy.

I made some oatmeal on the stovetop (and made extra for tomorow) and while it was cooking I put a mushed banana in the microwave for about one minute (15 seconds at a time) and the sugars in it began to breakdown and make a delish mushy mess.  When my oats were done I added about half of it to the bowl with the bananas and then added 1 tbs. peanut butter, a little brown sugar, sweetened coconut and some dried fruit.  In hindsight I think this would have been better if I wouldn’t have added the peanut butter coconut and dried fruit because it kinda masked the flavor of the yummy bananas.  I’ll try tomorrow and let you know!
