Amazing eats!

Since we organized all of our recipes we’ve found some really amazing ones and decided to really dig into our return to Clean Eating. I know that we will be far from perfect, but Carl and I are both tired of feeling sluggish and unhealthy and want to do something about it. Since we have the summer off we are going to utilize the time to get some routines in place so hopefully once the hustle and bustle of school starts up again in August we’ll have a smooth transition.

Or we’ll fall of the wagon again and eventually dust ourselves off and you’ll see another post like this – but I hope not!

Some of the amazing eats that we’ve had over the past few days include (but are not limited to – haha!)

Cashew Chicken with quinoa

Homemade cashew butter

This was so easy to make! Just trow some cashews into the food processor and let it whirl! It does take a little while, 10 minutes at the most, and patience is the key but it’s so good and much less expensive than buying it in the store. We didn’t use any oil either! Let me know if you’d like a demo of it 🙂

    I am really enjoying multi-grain cheerios usually two meals a day…..haha. They are quick and easy as long as there is milk in the fridge. And if there isn’t, that probably means there isn’t much else in the house, at which point I call someone to meet me for lunch/dinner. I finally can reply to your posts (not sure what changed). Thought I’d share some of my food brilliance with ya 🙂

    I love dishes made with quinoa! And the cashew butter looks delish. I made some black bean burgers last week and banana soft serve for the 1st time – amazing!

    Those look like some great eats. I love finding new and healthy eats to try. It’s fun to change things up a bit and you feel better all around from eating cleaner, right?! Great!
